How hard would it be to coat a stainless steel catback?

It shouldn't be any problem. I get SS mandrel bends that I've built downpipe and intercooler piping with and coat it all the time. Here's some pics of the stuff I did on Brad's POS that I inherited. The intercooler piping is 2.5" mandrel bends that I cut, fitted and welded ( the first time I had ever welded, BTW ) then powder coated and I don't remember what I used for the downpipe, 2.5" or 3". After I spent a day making the flange for the WG housing and making the DP and a block of plate he decided to use an external WG and the DP was never coated. If it's new, it should be very easy. Blast the surface to get a good surface on the SS, pretreat ( I use LiquidGuard PC on SS because it give better adhesion than IP and SS doesn't need the corrosion protection of carbon steels) , spray and cure. I would recommend high temp, regular TGIC, Hybrid's and Epoxy powders start the break down around 500*. Some people do use regular powders on bike exhaust but it greatly cuts the finishes life span. But, I think using full ceramic finish would be over kill and a waste of money unless you are wanting a finish color that isn't available in high temp powder. I'm on some of the powder coating forums and know a few great coaters in Texas ( I'm not sure where in Texas ). If you want I can maybe find you someone in your area, if you want.

What colors could you do? How about a gloss black or a chrome type finish? Does that change the price. Shipping for me is cheaper then others. It's going to be awhile before I do this because I will be buying new mufflers before I do it.

The piping is by far the prettiest thing on the car lol. The block off plate is pretty too.

We are going to be slammed until peak season in November and then it will get worse. I have lost 15 pounds though lol.
